Legacy Chocolates
Mike and Cathy Roberts, the founders and owners of Legacy Chocolates, believe in sustainable agriculture, the highest possible quality in foods, and the health and planetary benefits of growing and eating perennial crops. Classically-trained pastry chefs, and veteran farmers and restauranteurs, they walk their talk in business and in life. They began their ventures with Legacy Fruit Farms, a truck farm in the hills along the Chippewa River in western Wisconsin, where they still live today with their huskies, their Scottish highland beef cattle, chickens and a few cats.
Mike is known for his finely-tuned palate, and is an expert on the nuances of flavor and texture in chocolate. He regularly speaks about fine chocolate, and the health and agricultural implications of chocolate, at events in the upper Midwest. Cathy’s high standard for quality ingredients is gloriously reflected in Potion No. 9 chocolate sauce, made from her personal recipe.
